Why This Recipe Works

What isit about sugared nuts that are so good? For me, it’s the sweet candy-likecoating with a crunchy nut.

Nuts aregood for you so that should make these good for you too, right? Let’s all justagree and move on, ok?

I’ve beenmaking these sugared pecans for so long, I’m don’t even remember where I firstcame upon them. I think it was in an online cooking forum somewhere. Turns outit’s a recipe from the Stop and Smell the Rosemary cookbook. I’ve adapted therecipe a bit over the years and am still making them each year after all thistime.

These Gourmet Kahlua SugaredPecans are a staple in my gift giving repertoire and are always a BIG hitwith everyone I give them too. Like, can’t stop eating them in one sitting kindof hit.

Warning: they are addictive. If you’replanning to make them for giving away as gifts, you might want to make themwhen your family is not home or ban them from the kitchen, so they don’t eattoo many first-ha!

I love to make these in big batchesand wrap them up and give them as gifts to teachers, neighbors friends or as hostessgifts.

In just a little more than 30minutes I can have a lot of my homemade gift giving treats ready and done.

They’re always very popular and most everyone will tell me they love them! No matter what you call them, sugared pecans or candied pecans, they are super simple and taste delicious!

What Ingredients are needed for this KahluaSugared Pecans Recipe?

Egg whites – See my tip below on how I separate the eggs.

Kahlua liqueur – This is found at a liquor store. I recently discovered they have different flavors but I just use the traditional Kahlua which has a slight coffee flavor. Don’t worry, the alcohol bakes off so that all you’re left with is the flavoring.

Sugar – I usually buy the store brand to save a bit of money.

Salt – Regular table salt is what I use. Other types like sea salt or Kosher are usually too coarse to use in baking recipes.

Shelled Pecan Halves – I purchase these in bulk at Sam’s Club or Costco. A pecan half means that they are not already chopped up and are the half of a whole cracked nut.

The smallerbags sold in the grocery store are SO much more expensive per ounce. Thisrecipe uses up the 2-pound bag I buy but whenever I do have leftovers, I justput them in a freezer safe zip-top bag and store for up to a year!

How to Make Kahlua Sugared Pecans

Over the years I’ve tweaked therecipe just a bit so I’m sharing it again with all of you all and with someupdated pictures too (the first one was SO tiny and not so great).

Kahlua has been my go-to liqueur ofchoice and has become the most popular. I’m not sure if that’s hint of coffeewith the sugar or what but it’s a winning combination!

To separate the eggs, I willsometimes use the egg shell transfer method but very often I can’t get thatjust right. So I prefer to use a egg separator spoon like this one. Makes lifeso much easier!

I’ve included pictures to show you the progression of how these sugar coated pecans bake in the oven. At first it will seem like there is too much liquid.

Be sure to stir between every 10 minutes (as instructed in recipe). Then, the sugary mixture will start to get foamy and it seems like it is falling off the pecans. Don’t worry—it’s ok!

Once you have finished the final 10 minutes, transfer to a baking sheet lined with aluminum foil or another pan with a silicone baking mat. Allow about an hour for them to fully cool.

You will notice that as they cool, the sugary coating will start to crystalize. This is totally normal!

Once the sugar roasted pecans arefully cooled, you may need to break them up into smaller pieces.

FAQs

Why are my candied pecans soggy? ›

If your pecans are soft, it's most likely because they weren't baked long enough and are still retaining moisture. The sugar needs to bake long enough to caramelize and form a brittle coating on the nuts.

How do you keep candied pecans from sticking together? ›

Under-cooking the pecans is the likely cause of stickiness, but the risk is low when they're oven-baked. After the sugar-coated nuts have darkened and turned very fragrant, about 20 minutes in the oven, stir the pecans and separate any pieces that have stuck together. Continue to bake for an additional 20 minutes.

Why do you soak pecans before roasting? ›

Wet pecans allow the salt to stick easily to the nuts. Plus, soaking nuts helps neutralize enzyme inhibitors, which can harm your digestion, and reduce phytates, which decrease nutrient absorption. Just submerge your nuts in water while the oven is heating up and you'll be good to go.

What are glazed pecans made of? ›

Candied pecans make a fabulous snack for holiday guests and parties. These glazed pecans are coated with a buttery brown sugar syrup and then baked to crunchy perfection. All you need is to boil butter, corn syrup, and brown sugar together, add the pecans, and then bake until brown.

Why didn't my pecan candy harden? ›

If you beat too long, the candy will seize and start to crumble. If you don't beat it long enough, then pralines won't set properly and will stay soft and sticky. Work quickly to drop heaping tablespoons of pecan praline mixture onto the parchment paper-lined baking sheet.

Why are my candied nuts grainy? ›

Either you used raw nuts, or you added them before the sugar had a chance to fully caramelize. Why is the sugar all crystallized and grainy looking? It means that the sugar has crystallized before caramelizing. Avoid stirring it before it changes its color.

Do candied pecans need to be refrigerated? ›

Store in a Cool, Dry Place

Keep your candied pecans away from sources of heat and moisture. This means avoiding storing them near your stove, dishwasher, or even on top of your refrigerator. Instead, store them in a cool pantry or cupboard.

How long can you keep homemade candied pecans? ›

How long will candied pecans keep? They will keep for up to two weeks in an airtight container at room temperature, at least three weeks in the refrigerator, or up to two months in the freezer. No matter where you store them, keep in a tightly sealed, airtight container.

How long to soak pecans before eating? ›

Preparation:
  1. Place the pecans and salt in a large glass or stainless steel bowl along with 8 cups of water. The pecans will swell during the soaking process, so you want enough water to keep them covered.
  2. Leave them on the counter to soak for 4-8 hours. ...
  3. After they are done soaking, drain and rinse in a colander.

Why do people boil pecans? ›

Boiling pecans before cracking them can actually help prevent the shell from shattering. Here's how to boil them to loosen the shell but not cook the meat: ● Bring a large pot of water to a gentle boil ● Add the pecans and let cook for 10-15 minutes ● Drain and let cool ● Get to cracking!

Why do my toasted pecans taste bitter? ›

I started doing some research, and I found a little-known trick to making pecans taste sweeter: Soaking and rinsing the shelled nuts in lukewarm water before roasting removes the tannins and pieces of corky material that can cause pecans to taste bitter.

How do you get the bitterness out of pecans? ›

Some of the tannin and all of the corky material can be removed by washing the kernels before cooking. To "sweeten" the pecan meats (kernels), simply put the pecan kernels in a bowl and fill with lukewarm water. Stir and tumble the meats in the water for several minutes and you will see the discoloration in the water.

What is the difference between praline pecans and candied pecans? ›

Praline pecans are just one variety of candied pecans. These pecans have a tasty coating or glaze and are also referred to as flavored pecans.

Why are my glazed pecans sticky? ›

If after they have cooled down, the pecans are still sticky, this means that the sugar mixture never reached a high enough temperature when on the stove. To fix them, place the nuts back into the skillet and cook a bit longer.

How many cups is 1lb of pecans? ›

Measurements and Substitutions

If you happen to have pecans in their shells, remember that 1 pound equals 3 cups shelled, about 4 cups pecan halves, and about 3 3/4 cups chopped nuts. Equivalents to know when using shelled pecans are that 1 pound equals 4 cups and 1 cup of pecan halves equals 3/4 cup chopped.

How do you fix soggy nuts? ›

Just toasting them in a dry pan or oven should be enough to revive them, but they'll also go in any recipe that requires nuts. We got through most of ours by toasting them with spices, to eat as nibbles or to add crunch to soups, stews and salads.

What if candied nuts are too soft? ›

If your candied pecans are soft, it is likely because the sugar syrup coating has not completely hardened. The syrup may still be wet, or it may have started to crystalize. If the syrup is still wet, you can try putting the nuts in the oven for a few minutes to help the syrup harden.

How do you dry wet pecans? ›

Pecans often contain excessive moisture when they first fall. The nuts should be dried before they are put in storage. Drying can usually be accomplished by placing the pecans in a shallow layer in a warm, dry area for two weeks. Adding fans and heat can speed drying.

Why are my candied walnuts soft? ›

Let the candied nuts cool for at least 20 minutes or until completely cool. You don't want to package warm nuts or the moisture will cause condensation which will soften the candy coating.
